About UsMemories in Chocolate is based in Largo, Florida. The owners, Jerilyn and Michael Stein, focus on providing excellent quality products in innovative ways. This is a family business, run by people with a desire to help people find the perfect favor for their event, or the perfect item to help promote their business. We want to help each and every client make a sweet impression on their guests or perspective and current customers! Each client is unique, and our desire is to design a favor or product that reflects our client's taste and style. Almost all of our items can be custom designed to match a theme or color scheme. We love to create new products to add to our site, so if you don't see something you want, please call us or drop us an e-mail. Maybe it's a specific molded novelty you want (there are over 4,000 chocolate molds out there, we are bound to find what you have in mind) or perhaps you are trying to match your favors to your wedding cake. Jerilyn would love to help you with that! We can even make a chocolate mold from an item you want to reproduce - just call us to see how feasible it is to do that with your specific item. As you can see from our site, we love to be creative! A note about our chocolate: We have two basic items on our website. 1. Chocolograpy - These are the chocolate items where the image is directly printed on the chocolate. All of these items are Belgian chocolate and are usually available in either Milk, Dark, or White Chocolate. 2. All other items - These items are our novelty molded items, our dipped bakery items, and our items that have photos that have been first printed on rice paper, then placed on the items we make. The "chocolate" used in these items are compounds or melts. Using real chocolate in these items would make the items much more expensive due to the extra steps involved in tempering and the higher cost associated with the chocolate itself. As these are novelty items we strive to keep the cost reasonable, and to that end use compounds. Rest assured that we use the highest quality compounds available. Currently we are using Semper Coating chocolate (a wonderful European brand used by many pastry chefs). We may occasionally need to substitute another compound, but we strive to ensure that any product we use has the closest taste and "mouth feel" to real chocolate as possible. Jerilyn is a fanatic about tasting different brands of chocolate, and conducts frequent taste tests (every one of our friends has had to subject themselves to this, not that they mind very much) to find the best tasting compounds! The best reward for us is to hear praise from another satisfied customer. We believe in continuous improvement. Let us know what you think.
